Ingredients:

  • 6 whole eggs
  • 2 cups liquid egg whites
  • 1 cup high protein cottage cheese
  • 3 cups chopped spinach 
  • 3 tablespoons grated Parmesan  
  • ½ cup chopped sundried tomatoes
  • ½ tablespoon dried dill + herbs of choice
  • 1 teaspoon salt

Process:

  • Preheat oven to 350
  • Soak chopped sundried tomatoes in warm water for a few minutes while prepping other ingredients
  • Drain tomatoes and add all ingredients besides the Parmesan to a large bowl
  • Whisk well to incorporate
  • Grease a 9×13 pan with oil
  • Pour mixture into the pan and top with Parmesan
  • Put the pan into the oven for ~30-35 minutes until the bake is evenly set
  • Slice into 8 equal pieces and enjoy as a high price item meal prep or snack!
