Ingredients: 6 whole eggs 2 cups liquid egg whites 1 cup high protein cottage cheese 3 cups chopped spinach 3 tablespoons grated Parmesan ½ cup chopped sundried tomatoes ½ tablespoon dried dill + herbs of choice 1 teaspoon salt Process: Preheat oven to 350 Soak chopped sundried tomatoes in warm water for a few minutes while prepping other ingredients Drain tomatoes and add all ingredients besides the Parmesan to a large bowl Whisk well to incorporate Grease a 9×13 pan with oil Pour mixture into the pan and top with Parmesan Put the pan into the oven for ~30-35 minutes until the bake is evenly set Slice into 8 equal pieces and enjoy as a high price item meal prep or snack!
