Ingredients:

  • 4 cups cooked and sliced beets 
  • 3 oranges
  • ⅓ cup crumbled feta cheese
  • ¼ cup minced red onion
  • ¼ cup minced parsley 
  • Juice of one lemon
  • 2 tablespoons EVOO
  • Salt and black pepper to taste 
  • Optional chopped pistachios/walnuts/pumpkin seeds for a crunch

Process:

  • Cook and cool whole beets and peel off their skins
  • Cut beets into 1/2 inch wedges or cubes
  • Add beets to a large bowl
  • Prep all other ingredients and add to the bowl with the beets
  • Toss well, adjust seasonings to taste, and let the salad sit sit in the fridge for at least one hour before serving
  • Keep leftovers in a glass tupperware in the fridge for up to 4-5 days
