Ingredients: 4 cups cooked and sliced beets 3 oranges ⅓ cup crumbled feta cheese ¼ cup minced red onion ¼ cup minced parsley Juice of one lemon 2 tablespoons EVOO Salt and black pepper to taste Optional chopped pistachios/walnuts/pumpkin seeds for a crunch Process: Cook and cool whole beets and peel off their skins Cut beets into 1/2 inch wedges or cubes Add beets to a large bowl Prep all other ingredients and add to the bowl with the beets Toss well, adjust seasonings to taste, and let the salad sit sit in the fridge for at least one hour before serving Keep leftovers in a glass tupperware in the fridge for up to 4-5 days
