Lately, we’ve been really into uncomplicated summer meals that don’t take long to whip up. This generally looks like a protein, a veg and a carb, depending on what we’re in the mood for. One hack we learned from Nicki Parlitsis, RD, is to prep (or buy!) a few sauces you love and keep those on hand in your refrigerator to zhuzh up simpler meals like these.

This ginger dijon dressing is so delicious and versatile, you can use it as a marinade, salad dressing, dipping sauce, or finishing sauce. We’ve been marinating salmon in it, baking the salmon for 15 minutes with a tab of butter, and serving it on top of a big salad dressed in the remaining dressing. SO easy. 

Ingredients:

  • 2 tablespoons of maple syrup
  • 1 tablespoon of dijon mustard
  • 1 clove of garlic, minced
  • 1 knob of ginger, minced
  • 1 tablespoon of white vinegar
  • 1 tablespoon of apple cider vinegar or red wine vinegar
  • ¼ cup of olive oil
  • ½ teaspoon of kosher salt
  • ½ teaspoon of black pepper

Note: we like to mix vinegars for optimal flavor but you can always just use what you have. 

Method:

  • Add all the ingredients to a blender and blitz until smooth. Alternatively, you can add all of the ingredients to a mason jar or bowl and whisk until smooth. 
  • Use immediately or cover and store it in the fridge until you’re ready to enjoy it!
